Recipe: Chocolate Icing Covered Christmas Shortbread

If you’re looking for something to bake over Christmas, why not try these Christmas shortbread covered with chocolate icing, decorated with mini marshmallows or chocolate chips for a festive treat.

These were baked in December 2018.

Ingredients:

For the shortbread:

30g caster sugar
60g salted butter
90g plain flour

For the icing you’ll need:

Icing sugar
Water
Cadbury Dairy Milk chocolate

Then for the topping:

Mini marshmallows
Chocolate chips

Method:

Preheat the oven to 190℃

→ Measure out the butter and sugar, mix it together, then measure out the flour and stir it in.

→ Roll the mixture out with a rolling pin (or just use your hands and flatten a piece at a time onto a plate like I did). Put a little extra flour underneath to try and prevent them from sticking to the plate when you flatten them out.

→ Now you can cut them out into whatever shapes you want. I used a couple of cookie cutters for most of the mixture, except for the last bit which I flattened into a circular sort of shape.

→ Place each one on a piece of greaseproof paper on a baking tray, then using a fork, add dots across each one to really give them that shortbread look. I used a knife to make the lines on the circular one.

→ When you’re done, put them in the oven and bake for around 15 minutes.

→ Once they are out of the oven, while you’re waiting for them to cool you can start making the chocolate icing.

Let’s decorate the shortbread!

→ Mix some icing sugar with water in a bowl until it’s a consistency you’re happy with. Not too runny, not too thick.

→ Break up the chunks of chocolate and place them in a heatproof bowl, add some water into a saucepan, place the bowl on top and put it on a low heat to melt the chocolate.

→ Once the chocolate has melted, transfer it into the icing mixture. Stir it together then start adding it onto the shortbread. It might be a good idea to get a spare plate for this, then you can decorate on one plate, serve on another, the decorating plate will get quite messy!

I added pieces of mini marshmallows on four of the shortbread and chocolate chips on the other two.
